Garlic Butter Pasta with Vegetables
Staying the night in your Airbnb and need to make a quick bite to eat? Tight on money? This vegetarian-friendly lemon butter vegetable pasta is quick and easy to make in most cities.
Total Time: 20 minutes
8 oz. Pasta Noodles (I prefer a penne or a rotini)
1/2 tbsp. Olive Oil
1/2 tbsp. Salt
4 tbsp. Butter
1/2 cup of Zucchini
1/4 cup of Onions
1 Tomato
1/4 cup of Green Peppers
1/4 cup of Red Peppers
1 tbsp. Garlic/Garlic Salt
1 Lemon
Parmesan Cheese
Instructions
Cook pasta as instructed on pasta box. For best results, add 1/2 tbsp of salt and 1/2 tbsp of olive oil to pot of pasta.
While pasta noodles are cooking, chop up your vegetables. Start with zucchini as it will take a bit longer to cook.
Coat the pan with 1 tbsp of butter. Then, add zucchini. Continue to chop your peppers and onions. Toss into pan with zucchini.
Next, season the vegetables with garlic/garlic salt, salt, and pepper.
Add in tomatoes. Stir vegetables occasionally to evenly coat and evenly season.
Add more butter.
Drain pasta noodles and add to skillet with vegetables.
Mix together to evenly distribute vegetables amongst pasta. Let vegetables and pasta noodle cook together for about 3 minutes, stirring occasionally.
Add a zest of lemon over pasta with a sprinkle of Parmesan.
Finally, enjoy your night in!
